In conjunction with the reenactment of Poggio Oddone, the tomes of Plaisentif cheese are presented at Perosa Argentina in the third week of September. This is a special cheese made with milk which is collected while violets are in bloom. It has a unique flavor that stays in the cheese after it is processed. In recent years, the Natural Parks of Val Troncea and Orsiera Rocciavrè have created paths allowing an itinerary of several days walking, passing through the high mountain pastures where this particular cheese is produced. The route can be covered in one or more days, including during the Sagra festival. The path passes along the sunniest slopes and the altitude is not high.
